The key to a healthy diet is to nurture diversity in the community within the gut. According to Billy, people need to realize that there is a difference between good and bad bacteria. It is possible to over-sterilize one’s environment and food, which is actually unhealthy in the long run.
“We should be looking to harness bacteria rather than avoid it,” agrees Rowan. By harnessing what nature has been providing “since people have been people”, food can be made safer and more bioavailable.
